chore: switch default emulator to gabbro (Pebble Round 2)

gabbro is now the primary dev target. Adds -basalt variants for all
emulator commands so the old rectangular display is still reachable:
  just dev-basalt, just debug-dev-basalt
  just logs-basalt, just screenshot-basalt
  just reset-flash-basalt
